That random timbral variation here is done by sending a sample-and-hold noise source, clocked by the envelope, to the DSM03's Tuning CV. Both low pass filters in the signal path* are wide open, so you're just hearing how DSM03 can be used to shape waves.

Nice - it's got an organic quality to it, as well as a bit of a surreal electronic banjo texture. Definitely seems pretty interesting!
